I am just happy the soft mod worked. This is a brand new xbox which I still can't tell the version of since the serial lookup didn't really jive with my serial number.
I don't know how to tell what version of dash I have in it but I also don't know why I would or would not use that patch dash option on a softmod machine with no chip?
I have a million questions and am just trolling for answers.
good luck with your quest! I'll post my findings as I find them.

once you have the softmod installed, the easiest thing you can do is get the AutoInstaller Deluxe 1.01. it has all the apps and emulators you could want. anyways the drives you see. C is where the dashboard usually resides, D is the dvd-rom e is your main drive in a stock hdd. if you upgrade your hdd f will be your main drive. xyz are cache drives and you should just leave those alone. don't save anything there. if you want to install apps or emulators. just create a folder in e or f called apps or emulators. and put the respective software in the respective folders. you don't actually "install" anything per se as there is no registry. the dashboard actually runs things by linking to the xbox executable ( a .xbe file ) in the proper place. you just gotta put things where the dashboard knows where to look. ex. games in e:/games applications in e:/Apps or f:/Apps and emu in e:/emulators or f:/emulators

Are there any xbox programs that would tell me what hardware/software versions I have?

no programs that i know of, but if you get the AID 1.01 you'll have prolly 95% + of the newest versions. otherwise #xbins on irc has the latest releases usually
