What main dash are you using? UnleashX? That can sometimes, post softmod, be left using a wrong MS dash XBE path or name. The Config.xml can easily be edited to use the right path if you do actually have a working MS dash XBE. Backup the Config.xml before editing it.
Any MS dash XBE would usually be on the C:\drive with a softmod but will almost certainly NOT be "xboxdash.xbe", the original MS dash. This will have been renamed as part of the softmodding process. With older SID it may be "msdash.xbe" and with new SID/AID could be "xb1xdash.xbe". But make no assumption what a XBE is/does merely on its name.
Any xboxdash.xbe you may find on the root of the C:\ or E:\drive will have been re-tasked to launch the now redundant Xbox Live or an online auto-updater. If your Xbox is online you do not want to launch either of those for obvious reasons. When 'playing' with XBEs I'd always suggest disabling any internet/network connection you might be using first.
If there is no MS dash launching XBE on C:\ then do you have an MS backup in E:\Backup\MS?
If it was softmoded by SID/AID you should have. SID copies the MS dash and unless that has been done won't allow you to proceed. It uses that copy to restore the Xbox if you ever want to remove the softmod. In that case the MS dash XBE will be "xboxdash.xbe".
You can edit the UnleashX Config.xml to use that or with XBMC put in a Dashboard path in the Settings.
If there really is no MS dash on the Xbox then find some clean stock files (most modding tool packages include them: HeXEn, SID/AID) and install it as an app and use that. Some softmods, like Rocky5's, actually install the MS dash as an app.
The only thing you need to do when using it from Apps is to make sure the launch XBE is renamed to "default.xbe". Once done you can edit the UnleashX Config.xml to use the new path to that location. This means the main UnleashX menu MS Dashboard option will work and, of course, you can also launch it by going into the Apps menu.
Whichever way you do it that should allow you change the resolution settings. However, if you're using a protected softmod you may find the resolution changes don't stick. In that at case you need to launch whatever installer tools disc you used for the softmod and most, like HeXEn and Rocky5's, have menu options for permanently changing the resolution settings.

Good to hear that.
I think that despite the better and, arguably safer, softmod/hardmod packages out there that AID is still, if you're careful, one of the most useful tools available.

Yup AID stands out as probably the best all around installer disc. Sure its dated and some things may be better here and there but overall it was really the first all in one wham bam thank you mam disc.
The only thing I will caution the OP is if you are planning on running in HD you should grab either SID 5.12 or Babylon as the last AID used SID 5.11 NKP XBEs which didnt have the force progressive HD patch done right. You will most likely have to periodically reset your rez as it will try to revert to 480P as opposed to 720P or 1080i
