Should be easy enough.

Are you takljing about installing original Xbox game discs or something else?

Most commomn cause of a problem like this is that there is simply not enough space on the default drive.

E:\Games is the normal location and if you've not put in a bigger HDD and created a F:\Games folder then that may be the cause. Some Xbox games are over 4GB and with the other stuff you likely have on E:\, particularly a softmod, it is easy to run out of space on the retail HDD.

Another common problem is that you're talking about using a "backup" or other self-burned disc. Then it could be a disc drive compatibility issue. The, supposedly, universally compatible media is DVD-R if you're using anything but that it is a good bet it is the problem.
