You are on the right track don't worry, all you have to do now is hit the B button, this will get you to the main menu. Don't exactly know why it always does this, but it's just how the installer works. I think it has something to do with it being built upon MxM. Anyways, just hit the B button, and then proceed to the UXE Menu, then onto Install UXE.
You just have to know what kernel your xbox is (pretty much is it a v1.6 for is it 0-5. Main difference is whether to use the m8 bios or the x2 4981 bios. Incase you are wondering, use the evox m8 for any, and only the x2 if you have a 1.0-1.5 xbox. For the boot loader, I always use PBL-Metoo, it works really well and is seemless. The dashboard is personal preference, but if you are new to this, most people seem to suggest evox, I use it and have no complaints.
