The chip isn't really what lets you back up to HD, it's the bios. Just pick a chip you are comfortable with. Then pick a nice big HD.
Once you have them installed, you need to flash your chip. Now, I do know that some chips can be flashed via disk, others are flashed by a programmer that you connect to your PC. Buy a chip that seems like they have a lot of customer support for. You will see a lot of support for the Xecuter Chips, they seem to be very popular. I have a Xenium and have no complaints.
That is the only thing you will want to find out about your chip is how it can be flashed. Don't kill yourself in deciding on a chip. The end result is always the same.
